- 2 tablespoons vegan mayonnaise or plain plant-based yogurt for a lighter option
- 1 tablespoon apple cider vinegar or lime juice
- 1 teaspoon maple syrup or agave nectar
- 1 teaspoon Dijon mustard
- Pinch of salt and pepper
1- Whisk all the dressing ingredients in a bowl until smooth. Adjust the seasoning to taste, adding more vinegar for tanginess or more syrup for sweetness2-. Pour the dressing over the shredded vegetables and toss gently to coat.
