Ingredients
  

  • 1 cup canned chickpeas drained and rinsed
  • 2 cups fresh spinach washed and roughly chopped
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • salt and pepper to taste
  • 2 tbsp balsamic vinegar
  • 1 tsp honey or maple syrup optional for sweetness
  • 0.25 cup feta cheese crumbled, optional
  • 1 tsp sesame seeds for garnish

Instructions
 

  • Heat olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant, approximately 1-2 minutes.
  • Add the chickpeas. Cook for about 4-5 minutes until they're golden brown.
  • Fold in the fresh spinach and stir until wilted, about 2-3 minutes.
  • Season with salt and pepper. Add balsamic vinegar and honey/maple syrup if using. Stir to combine.
  • Remove from heat. Garnish with crumbled feta and sesame seeds. Serve warm.

Notes

If you’re short on time, canned chickpeas are a great shortcut. For a fresher taste, soak and cook dried chickpeas in advance.
