canned chickpeas
drained and rinsed

fresh spinach
washed and roughly chopped

olive oil

garlic
minced
salt and pepper

balsamic vinegar

honey or maple syrup
optional for sweetness

Instructions
Heat olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant, approximately 1-2 minutes.
Add the chickpeas. Cook for about 4-5 minutes until they're golden brown.
Fold in the fresh spinach and stir until wilted, about 2-3 minutes.
Season with salt and pepper. Add balsamic vinegar and honey/maple syrup if using. Stir to combine.
Remove from heat. Garnish with crumbled feta and sesame seeds. Serve warm.
Notes
If you’re short on time, canned chickpeas are a great shortcut. For a fresher taste, soak and cook dried chickpeas in advance.
