Fresh and Light DishesRice Paper Rolls

- 8 rice paper wrappers
- 1 cup shredded lettuce or spinach
- 1 medium carrot julienned
- 1/2 cucumber julienned
- 1 avocado sliced
- 1 cup cooked tofu or tempeh optional
- Fresh mint or cilantro leaves optional
- For dipping sauce: 3 tbsp peanut butter 2 tbsp soy sauce, 1 tbsp lime juice, 1 tsp maple syrup
-Fill a shallow bowl with warm water. Dip one rice paper wrapper into the water for about 5-10 seconds until soft.
-Lay the wrapper flat on a plate. Add a small handful of veggies, herbs, and tofu in the center.
-Fold the sides of the wrapper over the filling, then roll it up tightly like a burrito.
-Repeat with remaining wrappers and fillings.
-Mix all dipping sauce ingredients in a small bowl. Serve rolls with the sauce and enjoy!
