Ingredients
  

  • 8 rice paper wrappers
  • 1 cup shredded lettuce or spinach
  • 1 medium carrot julienned
  • 1/2 cucumber julienned
  • 1 avocado sliced
  • 1 cup cooked tofu or tempeh optional
  • Fresh mint or cilantro leaves optional
  • For dipping sauce: 3 tbsp peanut butter 2 tbsp soy sauce, 1 tbsp lime juice, 1 tsp maple syrup

Instructions
 

  • -Fill a shallow bowl with warm water. Dip one rice paper wrapper into the water for about 5-10 seconds until soft.
  • -Lay the wrapper flat on a plate. Add a small handful of veggies, herbs, and tofu in the center.
  • -Fold the sides of the wrapper over the filling, then roll it up tightly like a burrito.
  • -Repeat with remaining wrappers and fillings.
  • -Mix all dipping sauce ingredients in a small bowl. Serve rolls with the sauce and enjoy!
