Healthy Paneer Salad

Ingredients
  

  • 200 grams paneer cubed
  • 1 cup lettuce chopped
  • 1 tomato diced
  • 1 cucumber sliced
  • 1 bell pepper sliced
  • fresh herbs mint, cilantro
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • salt and pepper to taste
  • nuts, seeds or sprouts optional for topping

Instructions
 

  • Grill or lightly fry the paneer cubes in a pan until golden.
  • While the paneer cooks, chop all the vegetables and place them in a large bowl.
  • Combine the bell pepper, tomato, cucumber, and lettuce in the bowl.
  • Add the cooked paneer to the bowl with the vegetables.
  • Whisk together olive oil, lemon juice, salt, and pepper to make the dressing.
  • Pour the dressing over the salad and toss well to combine.
  • Top with fresh herbs and optional nuts, seeds, or sprouts for extra crunch. Serve immediately.

Notes

Paneer is rich in protein and calcium, making this salad an excellent vegetarian option. Add a refreshing drink like Vegan Green Juice for a complete meal.
