Italian Chopped Salad

Ingredients
  

  • 2 medium Tomatoes Choose ripe, flavorful tomatoes
  • 1 Cucumber Select crisp cucumbers
  • 1/2 Red Onion Use a sharp knife for easy chopping
  • 1 Bell Pepper Any color works!
  • 1/4 cup Olives Sliced or whole, your preference
  • 1/4 cup Cheese Feta, mozzarella, or your favorite
  • 2-3 slices Beef Bacon Cooked and diced (optional)
  • 3 parts Olive Oil
  • 1 part Vinegar
  • Herbs Oregano, basil, parsley
  • Salt and Pepper

Instructions
 

  • Cut your vegetables into similar sizes (about 1/2-inch pieces).
  • Put the chopped vegetables in a large bowl.
  • Add the olives, beef bacon, and cheese.
  • Make a vinaigrette with olive oil and vinegar (3 parts oil to 1 part vinegar). Add herbs, salt, and pepper to taste.
  • Pour the vinaigrette over the salad.
  • Gently toss the salad to coat.
  • Serve and enjoy!

Notes

Feel free to add other vegetables, cheeses, and proteins as desired. Store leftover salad in an airtight container in the refrigerator, keeping the dressing separate until serving.
