Ingredients

Apples (mix of sweet and tart)
Choose firm apples
All-purpose flour (or blend)
Oat or almond flour can be added
Vegan butter or oil
Vegan butter for tender crust, oil for crispier
Sugar
Brown or white sugar works

Instructions
Mix dry ingredients: flour, salt, and sugar.
Cut in vegan butter or oil until crumbly.
Add vinegar.
Add cold water, mixing until dough holds together.
Chill dough for at least 30 minutes.
Roll out dough and place in pie plate.
Use parchment paper and pie weights; bake according to recipe.
Remove weights and paper.
Cook apples over medium heat until soft (10-15 minutes). Stir often.
Pour cooked apple filling into baked pie crust. Spread evenly.
Add top crust if using; crimp edges to seal.
Bake at 375°F (190°C) for 45-55 minutes. Cover edges with foil if browning too quickly.
Pie is done when crust is golden brown and filling is bubbly. Knife inserted near center should come out clean.
Cool completely on a wire rack before slicing and serving.
