Vegan Lentil Stew
A hearty and healthy vegan lentil stew recipe.

- 1 cup Brown or green lentils Rinse before using
- 1 cup Carrots Chopped, use seasonal vegetables
- 0.5 cup Celery Chopped
- 0.5 cup Onion Chopped
- 4 cups Vegetable broth Homemade or store-bought
- 1 teaspoon Cumin
- 0.5 teaspoon Turmeric
- 2 Bay leaves Remove before serving
- 1 cup Tomatoes Diced, optional, adds acidity
- 0.5 cup Coconut milk Optional, adds creaminess
- Parsley or cilantro Fresh, optional, add before serving
Chop carrots, celery, and onion into small pieces. Sauté in a pan with a little oil until soft (5-7 minutes).
Add rinsed lentils, cumin, turmeric, and bay leaves to the pan. Stir in vegetable broth. Bring to a boil.
Reduce heat, cover, and simmer for 20-30 minutes, or until lentils are tender. Stir occasionally. Add tomatoes or coconut milk during the last 10 minutes if using.
Remove bay leaves before serving. Add fresh parsley or cilantro if desired.
