Instructions
Put the dry ingredients—flour, baking powder, salt, and pepper—in a big bowl. Mix them together with a whisk. Add any optional spices like garlic or onion powder now.
In a separate bowl, combine the applesauce and the squeezed zucchini. Stir them until they're well mixed.
Slowly pour the wet ingredients into the dry ingredients. Gently fold them together with a spatula or a big spoon. Don't stir too hard or too much. Just mix until everything is mostly combined. A few small lumps are okay.
Preheat your oven to 375°F (190°C).
Bake for 20-25 minutes. Check them after 20 minutes. They're done when they're golden brown on top and a toothpick inserted into the center comes out clean. If the tops are browning too fast, loosely cover the baking pan with foil.
Serve warm or at room temperature.
Notes
Remember to squeeze the zucchini very well using a clean kitchen towel or paper towels. Dry zucchini is key to fluffy clouds.
