Vegan Zucchini Clouds

A light and fluffy side dish or snack.

Ingredients
  

  • 1/2 cup all-purpose flour Provides structure
  • 1/2 cup gluten-free flour blend Use a blend that works well in baking.
  • 1 teaspoon baking powder Makes the clouds fluffy.
  • 2 cups zucchini Grated and squeezed dry. The drier, the fluffier!
  • 1/4 cup applesauce Replaces eggs.
  • 1/2 teaspoon salt Enhances flavor.
  • 1/4 teaspoon black pepper Adds a little spice.
  • 1/4 teaspoon garlic powder For extra flavor. Optional
  • 1/4 teaspoon onion powder For extra flavor. Optional

Instructions
 

  • Put the dry ingredients—flour, baking powder, salt, and pepper—in a big bowl. Mix them together with a whisk. Add any optional spices like garlic or onion powder now.
  • In a separate bowl, combine the applesauce and the squeezed zucchini. Stir them until they're well mixed.
  • Slowly pour the wet ingredients into the dry ingredients. Gently fold them together with a spatula or a big spoon. Don't stir too hard or too much. Just mix until everything is mostly combined. A few small lumps are okay.
  • Preheat your oven to 375°F (190°C).
  • Bake for 20-25 minutes. Check them after 20 minutes. They're done when they're golden brown on top and a toothpick inserted into the center comes out clean. If the tops are browning too fast, loosely cover the baking pan with foil.
  • Serve warm or at room temperature.

Notes

Remember to squeeze the zucchini very well using a clean kitchen towel or paper towels. Dry zucchini is key to fluffy clouds.
