This refreshing Watermelon Sandwich is the perfect no-cook summer snack or light lunch. Sweet, savory, and endlessly customizable, it's as fun to make as it is to eat!
1large seedless watermeloncut into 1-inch thick slices
4ozlow-fat cream cheeseor substitute with Greek yogurt
1handfulfresh mint leavesfinely chopped
honey or agave syrupoptional, for sweetness
fresh berriessuch as strawberries, blueberries, or raspberries
cinnamona dash for extra flavor
sliced turkey or hamoptional, for a savory twist
Instructions
Slice your watermelon into thick 1-inch rounds, sturdy enough to support fillings.
Mix the low-fat cream cheese with finely chopped mint. Add honey or agave syrup if desired, and stir until smooth.
Spread the cream cheese mixture onto a slice of watermelon. Top with fresh berries and optional turkey or ham. Place another watermelon slice on top to form a sandwich.
