  • 1 large seedless watermelon cut into 1-inch thick slices
  • 4 oz low-fat cream cheese or substitute with Greek yogurt
  • 1 handful fresh mint leaves finely chopped
  • honey or agave syrup optional, for sweetness
  • fresh berries such as strawberries, blueberries, or raspberries
  • cinnamon a dash for extra flavor
  • sliced turkey or ham optional, for a savory twist

Instructions
 

  • Slice your watermelon into thick 1-inch rounds, sturdy enough to support fillings.
  • Mix the low-fat cream cheese with finely chopped mint. Add honey or agave syrup if desired, and stir until smooth.
  • Spread the cream cheese mixture onto a slice of watermelon. Top with fresh berries and optional turkey or ham. Place another watermelon slice on top to form a sandwich.
  • Sprinkle a dash of cinnamon over the top of the sandwich for extra flavor.
  • Slice the sandwich into smaller pieces if desired and serve immediately. Enjoy!
